I have just the thing with this ‘Gin Ginger Cocktail’ recipe which is fabulous all year round, not just Summer time! Full of botanicals and refreshing flavours, this cocktail just might become your go to, whenever you’d like to wow your guests when entertaining. It’s festive and fun!
Ingredients
2 nip /45-50ml of Gin (I’ve used a local brand; Epoch Gin)
2 tbsp Elderflower liqueur
500ml Fever-Tree Ginger beer, or other ginger beer
handful of mint leaves
1 long red chilli, deseeded and cut lengthways in half, or some slices of chilli deseeded.
1 lime, sliced

Method
Firstly, place half a chilli into your gin for 30mins to an hour to infuse.
Once that time is up, place ice into a glass with gin, elderflower liqueur and top with ginger beer.
Clap the mint to release the aromatics and place in with lime slices and extra squeeze of lime if you like to taste.
You can also garnish with slices of chilli, dried lemon/lime to give it a festive appearance.
Note: You can make this alcohol free, by omitting the addition of gin and elderflower liqueur.
