Rocky Road is a tradition in our family at Christmas (with dark chocolate). My son Marlsy and I created our own fun rocky road recipe after he was inspired by watching a video on rocky road. Luckily some of our pantry staples include nuts, marshmallows and a couple of opened packets of snakes. You can get creative and have fun with ingredients. All I needed was the key ingredient of quality dark chocolate. Marlsy only likes dark chocolate so we’ve balanced the sweetness by mixing a cup of snakes and marshmallows in with the quality organic 72-75% range of chocolate. This is a recipe you can do in the early morning, lunch break or in the afternoon as it doesn’t take long to set.

Ingredients
400g dark chocolate, broken into pieces or chopped
250g reduced sugar snakes chopped into 1cm pieces.
250g marshmallows, chopped
150g mixed nuts, coursely chopped (we used a handful each of pistachios, hazelnuts and toasted almonds).
Method
Notes: This recipe is flexible and forgiving. Nut allergic? Leave out the nuts and swap out for seeds like pepitas or sunflower seeds or other dried fruit like apricots. Dairy-free? Ensure your chocolate is vegan safe. Don’t like dark chocolate? swap it out for your favourite milk or white chocolate for a sweeter treat.
