Lockdown Rocky Road Recipe

Are you looking for fun and delicious lockdown recipe activities?

My son Marlsy and I created our own fun rocky road recipe after he was inspired by watching a video on rocky road in his homeschooling lesson today. Luckily some of our pantry staples include nuts, marshmallows and a couple of opened packets of snakes. All I needed was the key ingredient of quality dark chocolate which fortunately we have a local maker in Orange called Origin Chocolate (now available in Harris Farm stores too). Marlsy only likes dark chocolate so we’ve balanced the sweetness by mixing a cup of snakes and marshmallows in with the quality organic 72-75% range of chocolate. This is a recipe you can do in the early morning, lunch break or in the afternoon as it doesn’t take long to set.

Marlsy’s Lockdown Rocky Road Recipe

Prep time: 15 mins – Cook time: 5 mins with 4 Ingredients

Ingredients

400g Origin dark chocolate (we used the 72% Peruvian dark and 75% Single Estate Cocoa), broken into pieces or chopped

250g Reduced sugar snakes chopped into 1cm  pieces.

250g marshmallows, chopped

150g mixed nuts, coursely chopped (we used a handful each of pistachios, hazelnuts and toasted almonds).

Method

  1. Grease and line the base and sides of a 32cm x 23cm rectangular baking tray with baking paper.
  2. Place the chocolate in a heatproof bowl over a saucepan a third filled with simmering water; stir with a metal spoon until melted.
  3. Place the snakes, marshmallows and nuts in a medium to large bowl. Pour over the melted chocolate and gently stir to combine. Spoon into your prepared tray. Set aside in fridge for 1-2 hrs until set.
  4. When ready to serve, use a large knife to cut into square portions. Store in an airtight container in fridge or at room temperature.
